Sorimachi Jiro’s Shirahama Mushrooms

Savories Japan, the excellent website that presents the best of Japanese savory food, has listed shirahama mushrooms from Osaka.
They are a version of shirahama or maitake mushrooms that are grown indoors, mostly in a mash style.
The photos are from the Sapporo Shiroshima “Mio” restaurant (in, of course, Sapporo), and according to the restaurant’s website this was their first batch of shirahama mushrooms.
The mushrooms are said to be aged for 6 months, which is certainly true of the standard Sapporo Shiroshima shirahama mushrooms.
